Can you tell me if you know a reason why the combination of link+infill is not a good modelling tactic? What processes might contribute to the bad convergence behaviour?

As explained in the help file, the role of the link element is to allow tension without allowing compression, hence simulating the fact that the infills are commonly not rigidly connected to the surrounding frames. A trilinear curve for this case is not appropriate. Probably the lin_asm or the gap_hk curves are more appropriate.
